Dalmore 25 years is the perfect illustration: imagine two superb nectars, resulting from the same maturation in new American oak barrels, separated to age respectively in Sherry barrel Palomino Fino 25 years and in bourbon barrel of first filling of 1980, finally reunited to complete their wooded journey in Tawny port casks from Portugal. A treat of exotic fruits, almond paste, vanilla, chocolate truffles that bear witness to this unique journey through the woods and ages. Profile: ample, creamy. Figs and dry dates, rice pudding, noble spices (saffron, cumin) and heady flowers (honeysuckle, lily) . Candied citrus (lemon, orange) , Russian leather and camphor. Nose: full, creamy. Notes of figs and dry dates, rice pudding, noble spices (saffron, cumin) and heady flowers (honeysuckle, lily) precede candied citrus fruits (lemon, orange) , Russian leather and a hint camphor. Grains of salt are deposited on the tongue while ripe fruits (plum, pear) coat the palate. It oxidizes gradually and lets pass notes of cherry brandy and prune. The retro olfaction is delicious (tarte tatin) and the empty glass is balsamic (cedar, Landes pine) Dalmore can boast of having the oldest stills in the Highlands, one of which has been operating since 1874.
