Marchio storico della denominazione Bolgheri nell'ambito della produzione di vini rossi strutturati e longevi, l'azienda Grattamacco nasce nel 1977, sulla sommità di una collina affacciata sul mare tra Castagneto Carducci e Bolgheri, a 100 metri d'altitudine. Tale posizione strategica garantisce ai 14 ettari impiantati a vigneto un clima asciutto, mite, con notevoli escursioni termiche soprattutto alla fine dell'Estate capaci di assicurare un perfetto ciclo di maturazione delle uve qui prodotte. I criteri agronomici adottati in vigneto seguono regimi di coltivazione biologica, con basse rese per ettaro, mentre l'elevata età media delle vigne (circa 25 anni) garantisce uno sviluppo aromatico delle uve di ampio spessore. Sono queste le premesse fondamentali per la produzione del Bolgheri Rosso Superiore Grattamacco: perfettamente acclimatate sui terreni argilloso-calcarei Bolgheresi e unicamente trattate con procedure manuali in campo, le uve di Cabernet Sauvignon, Merlot e Sangiovese che confluiscono nel Grattamacco Superiore vengono sottoposte a fermentazione alcolica in tini tronco-conici di legno, mentre la fermentazione malolattica coincide con il lungo affinamento in barriques, capace di regalare morbidezza e nettezza aromatica. Consistenza, complessità e aderenza alla tipicità del terroir sono i requisiti precipui di questo grande rosso di Bolgheri, punta di diamante della produzione della tenuta Grattamacco.
