If it is not quite an orange wine, this Chardonnay has undergone a very particular vinification. In general, white wines are vinified without contact with the solid parts of the grapes, which are removed during the press. Here, the oenologists of Prieuré Roch have decided to leave the skins, pips and stems in contact with the juice during fermentation. The result? Astonishing! Significantly more body than a classic Chardonnay thanks to what could be called tannins if it were a red wine, a color that is more amber gold than classic gold-silver for this flagship grape variety of Burgundy.
