Elaboration
It is harvested at a stage of fresh fruit with optimal maturity. Manual harvest in 15 kilo boxes. Once in the winery, it is destemmed and crushed and fermented in wooden vats. It was in contact with the skins for 10 days after the completion of fermentation until it was pressed.

Breeding
In 500 liter French and Italian oak barrels for 18 months.

Clarification
Natural in barrel after filtration at 5 microns.

Production
1950 bottles.

Tasting note
Cherry color, open color. The nose presents nuances of bramble fruits, sloes, with touches of Mediterranean scrubland, finely spiced, with aeration the typical cocoa notes appear in limestone marl. In the mouth it caresses the palate. Texture and fine grain. Persistent.
