Beyond The Clouds, where only the most ambitious and capable producers aim to venture: Elena Walch certainly succeeds with this wine from Alto Adige, the result of a skilful blend that encompasses a global vision of the white grape varieties grown within the vineyards corporate. A label where personality, territory, and intense aromas combine with the aspiration of a wine woman who has managed, with her own cellar, to establish herself as one of the reference names in the entire region, also thanks to the modern winemaking techniques used .
The Elena Walch winery creates this Beyond The Clouds as a prestigious cuvée, in which all the white grape varieties grown in its own vineyards are found, with a prevalence of Chardonnay in the final blend. The different grapes, after harvesting, ferment all together in steel, remaining on the yeasts for about 3 months; then we move on to the refinement phase, carried out first in French oak barriques for 10 months, and then, after bottling, for another 6 months directly in glass.
Beyond The Clouds by Elena Walch is a white wine which, at sight, takes on an intense golden hue. The aromatic bouquet that presents itself to the nose is complex and layered, with notes of exotic fruit and flower petals that alternate with light toasted hints, deriving from the maturation in wood. When tasted, it is full-bodied, with a soft, fine and elegant sip, in which a nice savory component is found; ends with a lingering ending.
