DESCRIPTION
Adega Cooperativa de Vidigueira, Cuba and Alvito was founded in 1960, but its chronology goes far beyond its 60 years of existence. It was created to protect the vineyard, wine and the ancient lifestyle of this wine sub-region and bring even more renown and quality to the wine produced here.
Over the years, an intense effort has been made to protect grape varieties and production techniques, which is why, in the winery heritage of the Winery, autochthonous grape varieties are discovered, perfected from generation to generation, among which Antão stands out. Vaca. This grape variety, legitimized as the Vidigueira variety and inspiring muse of the winery, gives rise to an exceptional white wine whose notoriety earns it the title of «The White of Alentejo».
With a production of approximately 6 million liters of wine per year and 8 million kilos of grapes per harvest, resulting from the exploration of around 1500 hectares of vineyards by its approximately 300 partners, it is today a modern and prominent winery. Never forgetting its origins, it projects into the future supported by the people and the quality of the terroir of the wine sub-region.

WINE VARIETIES: Aragonez, Tinta Grossa & Trincadeira.

VINIFICATION
The winemaking process for Vila de Frades 1656, born in Taberna dos Arcos, in the village that gives it its name, is ancestral and with as little intervention as possible, respecting as much as possible the terroir of the Vidigueira sub-region. Furthermore, the drink, endorsed by winemaker Vasco Moura Fernandes, is also distinguished by batch vinification, with the harvesting of the three varieties simultaneously, in order to find “the optimum point of grape maturation”, followed by of an internship, with skin contact, for a period of five months.

TASTING NOTES
Ruby colored wine, intense aroma of red fruits, slight spice, well combined with earthy notes from the wine cellar where the vinification was made, followed by aging with skin contact for 5 months. In the mouth it reveals a slight sucrosity, firm tannins, long and persistent finish.

SERVING
The ideal consumption temperature is between 18ºC and 20ºC, and can be harmonized with Portuguese cuisine, for example, with “Borrego com Silarcas”, a harmonization suggestion made by the producers.

TASTING NOTES
Full in color, harsh and wild in aroma, with notes of resins, tree bark, dried fruits, all in a register very far from fashion. The acidity is good, the tone austere, a touch of bitterness is felt, everything telling us that we are facing a white man with an old and rural profile.

SERVING
It goes well with cabidela rice. Wine must be served chilled. Store in a cool, dry place, protected from light and temperature fluctuations. Serve at a temperature between 10ºC and 12ºC. Consume in moderation.
