Unique copy of the famous treatises by the Bavarian Mathias Giegher, comprising instructions for folding table linen, the duties of a chief steward, and carving, all with fascinating and instructive plates, from galleons made of linen to a lobster carved from a citron. The work is formed by the following chapters: 1) Trattato delle Piegature, where it is described the folding of all kind of clothes to set and to enrich the table2) Trattato dello Scalco. with the description of the correct season of the year to cook any food, and on the setting and dressing of the table. At the end of the chapter Ghieger lists four full four course menu, one for each season of the year, with the description of how to serve the food3) Il Trinciante, on food carving, where it is described which carving tools to use and how to maintain them, and how to carve any food, from fish to vegetable, to any kind of bush meat. The 48 engravings represent: (6) how to fold towels(4) the placement of different dishes on a table(12) carving of fishes and meat(24) the various parts of foods, their names, and how to slice, decorate and present the fruits and seafood(2) skewers and knives (2 big folding plates) Mattia Giegher was born around 1589 in Mosburg in Bavaria (probably under the name of Matthias Jäger) and he emigrated to Italy to 1616. In 1620, he began to serve the German community in Padua and especially the teachers and layers from the local university, to which he dedicated his book in the person of Burcardo Ranzovio, German advisor at the law university. CONDITIONS: Light waterstains at title page, otherwise in very good condition.
